All About Avocados!

Avocado health benefits make a persuasive case for why you should be eating more avocados today. This fatty fruit is an amazing superfood you should always have on hand!
The healthy oils, plus the Vitamin C and E combination in avacados help to keep the skin nourished, whether eaten or applied topically. They are also a great source of fiber, potassium, folate, and the vitamins E, K, C, and B6! Don’t forget, this yummy fruit is sodium and cholesterol free.
Here is one of our favorite avocado recipes:
Tomato Avocado Melt
- 1/2 avocado, thinly sliced
- 1 Roma tomato, thinly sliced
- 1/8 tsp Cayenne pepper
- 1 tbsp light mayonnaise
- 4 slices of bread
- 8 slices of cheese (we like colby jack!)
Spread a thin layer of mayonnaise on each piece of bread. Sprinkle with a pinch of cayenne pepper. Layer bread with tomato and avocado slices and top with cheese. Broil on high for 2-4 minutes, or until bread is toasted and cheese is bubbly! Enjoy! (serves 2)
